of the Grape
Berstin was born from a simple yet powerful intuition: to use hot water infusion — an ancient, universal technique — to extract from grape skins all the aromatic substances, polyphenols, and anthocyanins that give wine its character. Berstin captures the essence of the grape and its native land.
A Chianti Classico Sangiovese infusion stands apart from one made from Maremma Sangiovese; a Nebbiolo has entirely different notes from a Merlot.
The terroir is already in the skin!
Yeast brings it out during fermentation, but it doesn’t create it from nothing. With Berstin, we wanted to capture that original, pure voice.

Emanuele Graetz
36, a winemaker in Panzano in Chianti, where he runs his farm “Isola delle Falcole”, and owns Viteoak Wine Selection, a company that distributes Italian and French labels overseas. His dual perspective — deeply rooted in the Tuscan countryside yet accustomed to engaging with the global market — sparked the idea.
“Quality wine will always remain a cultural icon, but I felt the need to create an alternative for those who, by choice or necessity, don’t drink alcohol. Not an industrial product, but something that authentically tells the story of terroir and craftsmanship. I don’t believe dealcoholization is the right path — it’s a harsh process that strips away the work of small producers like us. I wanted a gentler, more natural approach.”
